Today I had a craving for a baked potato and Mexican food, so I put them together! I nuked the potato then added one fourth cup salsa and two tablespoons Sabra roasted red pepper hummus. The hummus made the potato creamier so I did not even miss the butter or sour cream that would be on a normal loaded baked potato. One baked potato = 160 calories, salsa = 20 calories, hummus = 70 calories. Healthy and Tasty....Yum!
