Breakfast Time!!

Everyone loves waffles and scrambled eggs but not all are created equally. This is a convenient, low calorie and well balanced breakfast. Serves one but can be made for many just as easily.

Kashi Blueberry Waffle – toasted

Topped with (in following order):

-Smart Balance (or butter spread of choice)

(also could use Laughing Cow Cinnamon Cream Cheese Wedge, your favorite Jelly or Nut Butter)



- ¼ cup Mixed Frozen berries (microwave for 20 seconds, until thawed)

Egg White Veggie Scramble

-2 large egg whites

- ¼ cup chopped peppers

-handful of spinach

-salt & pepper to taste

- (optional) hot sauce on finished dish
Simply spray a pan with a little olive oil and scramble veggies first until spinach is a little wilted and peppers are warm then add egg whites and seasonings. Scramble until firm. Enjoy the first meal of the day!
