Looked up many recipes for vegetable soup and took what I liked from them to make this. Friends and family approved. Love this as an appetizer to dinner on a cold day or as a meal with side dishes.
6 cups vegetable broth
2 cups water
1 can-10 oz. Mild Rotel
1 can-14.5 oz. low sodium diced tomatoes
Half a yellow onion, chopped
2 celery stocks
1 green bell pepper
1 cup brussel sprouts, halved
½ cup mushrooms
2 cups shredded, raw cabbage cole slaw mix (in salad greens section)
½ cup broccoli
½ cup chopped carrots1 tbsp. olive oil
In a large pot, sauté chopped onions in a little olive oil for about five minutes or until onion tender. Put all ingredients in pot and put on high until boiling. Once at a boil put lid on pot and let simmer at medium heat for 30 minutes.
