New TOFU For YOU


 Super Veggie Tofu Scramble

½ cup kale
Handful spinach
Dash of basil
Pinch of salt
Pinch of cracked black pepper
Pinch of garlic powdered
Splash of white balsamic vinegar
2 tsp tomato paste
¼ yellow pepper chopped
¼ cup zucchini
¼ cup extra firm tofu, cut into playing dice sized cubes
Spray olive oil
¼ cup mushrooms
Sauté all ingredients in pan until desired tenderness. 

Mexican Night Vegan Style

¼ cup squash
¼ cup zucchini
¼ cup black beans
½ orange bell pepper
¼ cup extra firm tofu, cut into playing dice sized cubes
Handful spinach
Handful mushroom
Pinch of chili powder
Splash of Cholula (Mexican hot sauce)
Squeeze fresh of lime juice
Squeeze of fresh lemon juice
Dash of cumin powder
Pinch of garlic salt
Pinch cracked black pepper
Splash of white wine vinegar
Mix all ingredients in sauté pan with a little spray olive oil. Sauté and simmer until vegetables are tender.

*Both recipes yield one serving, double or triple the recipe as needed.*
