I know you are probably sick of my love of vegetables by now but I had to share this uncommon but amazing combination.
Butternut SquashYellow Peppers
Cracked Black Pepper
Spray Olive Oil
Preheat oven to 380oF. Wash and peel parsnips. Slice thinly (the thickness of two silver dollars stacked together). Cut butternut squash into cubes slightly bigger than playing dice. Slice peppers into strips about a half inch in diameter. Line baking sheet with non stick foil, spray with olive oil, sprinkle vinegar and spices on top and bake for 20 minutes.
